Makes 6 Servings
3 tablespoons olive oil
1 pound penne pasta; cook according to package direction
2 whole cooked chicken breast diced
2 large ripe tomatoes diced
2 tablespoons finely chopped flat parsley
4 tablespoons finely chopped fresh basil
½ cup pitted Kalamata olives
2 tablespoons capers rinsed and drained
1 (6.5oz) THEIA™ Naked Spreadable Feta Cheese
¼ cup olive oil
2 tablespoons white vinegar
2 cloves garlic, minced
2 tablespoons fat free Greek yogurt
Salt and pepper
Step 1: Drain the pasta very well and place into a large bowl
Step 2: Add the chicken, tomatoes, parsley, basil, olives, and capers.
Step 3: In medium bowl whisk THEIA™ Naked Spreadable Feta Cheese, olive oil, vinegar, garlic, yogurt and salt and pepper to taste. Mix well until combine.
Step 4: Pour dressing over the pasta and toss to coat well

This salad is a great meal choice. If you’re looking to reduce cooking time, buy store bought rotisserie chicken.
